Ooh, I just found this thread.
Let's see, some of my favorites:
I sat next to Michael Crawford (the original Phantom of the Opera on Broadway) in Muppets. He came to see the show while I was in the attraction office checking my work schedule. Since I was in civilian clothes, I decided to go into the preshow to see if I could see him (I had a crush on him). He ended up following me into the theatre and sitting next to me. Nice guy.
I was working as a concierge at GF and Ryan Reynolds was the first guest I checked in! My trainer kept leaving me alone (I was already trained in resorts but he was supposed to be teaching me the GF specifics). I turned around and Ryan was there to check in. I checked him in and took him to his suite. When I got back, my trainer was mad that I'd done that without him (he'd disappeared into the back office again). He was just mad that I'd met a celebrity and he hadn't. Two seconds after he stormed off again, Ryan came back to the desk, called me by name, and asked how to find the pool! Served the trainer right to miss a celebrity TWICE!
You won't believe this one. Sea World had a radio event to celebrate the Key West area of the Orlando park opening. Jack Hanna was doing an interview on a local radio station and one of the publicity people decided that the character Baby Shamu should join him. Baby Shamu sat there the whole time thinking, "HOW does a non-speaking character DO a radio interview?!" Obviously Hanna thought the same thing as he kept looking at me funny every time the interviewer would make a comment about Baby Shamu.
While I was concierge at the GF I also did dinner reservations for Roy Disney (great guy) and his wife (kept suggesting they go to Universal so he wouldn't end up working all the time). I also met Joan Rivers (surprisingly funny and nice to the staff), Courtney Cox and David Arquette (on their honeymoon - came to the door in towels when I made a delivery), Cuba Gooding (very intoxicated), and several others.
Jason Alexander follows me around the park. I've seen him at DHS twice. Once at the Hunchback show (he asked me if he could go backstage and meet the cast) and once on Coaster. What a great guy. I've also met most of the Star Wars people (including Lucas), Debbie Reynolds (She told me I'm too young to know who she is, so as far as I'm concerned, she's Princess Leia's mom!), John STamos (jokingly tried to pour a Coke over my head because I couldn't let him bring it into an attraction), and Christie Brinkley.
Oh, and I was working at Muppets one afternoon when another CM brought a guy up to me. The CM explained that the guy was a celebrity but he hadn't known that he could get a VIP tour guide to help him plan his day. He was having trouble finding things that his family would enjoy since the backstage tours and such were not really his thing. The guy introduced himself, taking off the hat he was wearing. It was Amrish Puri, the Indian actor who played the villian in Indiana Jones and the Temple of Doom. We ended up chatting about Indian movies (I'd actually seen him in an Indian film when I studied cinema in college) while the rest of his family went into Muppets. Now THERE was a terrificly nice actor!

I was working as a cashier in 2006, and saw Pierce Brosnan. He's the only famous person I have ever seen... He was Remington Steele on tv, and also James Bond in some of the Bond movies.
When I was working during the Pirates premiere, I saw no one famous, except I talked to and got ice for the Pirate on Stilts people that were warming up the crowds/entertaining them.

I was setting at the Concierge desk at the Polynesian talking with the CM and waiting for some packing materials. While we were talking a rather tall and striking looking blond girl, with another girl in tow, stopped and ask to interrupt, which was okay, and then asked where she was supposed to pick up some photo' that she had taken. The CM directed her to the main lodge.
the two left, and I asked him who that was, as I thought that I had seen her somewhere before, maybe television. He told me that it was Brooke Hogan.

I saw Sean Astin at the exit to Space Mountain sitting down same day as the Nemo press event prior to official opening. :)
Also Pamela Anderson leaving Grizzly River Rapids area.
Whenever I see a "Plaid", I look around to see who they're with.
