Yes, shashimi is without rice, just the fish. Sushi is with rice, but it can be egg, raw fish or cooked items. I've never seen veggies on sushi, just in rolls.
In fact, don't give up completely on sushi, there are many things that are cooked :)

At my local grocery store, they have a sign by the sushi shelf that says it's simply vinegared rice.

Technically sushi means 'vinegared rice'. Colloquially it is used to describe fish on rice. The most commonly eaten is nigiri-zushi, which is the fish on the rice. There is also inari-zushi, which is fried tofu pouches with sushi rice stuff in it. They are very tasty. Chirashi-zushi is a bowl with sushi rice in it and sashimi on top. Maki-zushi are rolls, futomaki (thick rolls), hosomaki (thin rolls) and uramaki (inside-out rolls).
