If you go during the Christmas season, I highly recommend the Yuletide Fantasy Tour. Make sure you ask for James as your tour guide. :)

If we're talking about tours now I have to reccomend the Magic Behind Our Steam Trains Tour. You learn a lot about the history of the WDW trains, see the roundhouse, learn how the trains work, general history of the Magic Kingdom, and learn about Walt and his love of trains.
