What else do they do?
After watching the afternoon parades and the singers and dancers around the parks I am curious about what they do the rest of the time. Do they work 8 hours, do other jobs, or just hang out?

Good question there. I know one person I worked with at Safari who went on to Entertainment. She was a stiltwalker, friends with Maleficent in F!, and several other things during the course of the day. From what I gathered, you name it, she did it at some point or another.
Then there's a story I know about Captain Jack backstage, that will not be told here or anywhere else, at the request of the person it happened to/for... :D:

A few people here know about the effects of putting a Lapu Lapu in to me. Since I don't drink much, I don't hold my liquor well.
And the details are much more touching than amusing. And better told by the person who it happened to. And I'm not saying who. Let's just say it was some much needed Magic that day.

I've seen one gentleman that I know was in the Parades part of Entertainment. I saw him a few days ago overseeing a group of high schoolers in an orchestra. The kids were playing their music at Plaza Gardens Stage, and I was walking past on my way to work.
I've also seen others that perform in parades also do crowd control or walk with the parade overseeing the other performers...

Yes, when there are two night parades, the performers get a longer break, but by and large, characters are worked about as hard as a body can stand.

Since it came up...I happen to be friends with the guest in question...and she would share the details but can't for fear that the poor CMs who made it happen would be inundated with demands for a repeat of this truly ONCE in a lifetime happening.
Put it to you this way: she never saw it coming, still can't believe it happened, and is still grinning about it- it is a memory for a LIFETIME, I can tell you that with complete certainty :D:
