I love optimists!
Assuming you'll be on 101 for the first part of the drive, you'll be fighting your way through one of the worst traffic messes where 101, 5, and 10 come together. Plus, according to Google Traffic, there's construction right in the middle of it. Google also suggests up to 2 hours 20 minutes.
Good luck.

really over two hours - that is bad!
i am from the UK - so just going by what the guidebooks tell me!
is the traffic constantly moving or is it stop, start, stop, start.
dang - planning to go on a monday - that even worse isn't it!

Either leave at O Dark Thirty or 11:30 AM. The freeways are pretty clear between 11:30 and 1 PM as everyone is at lunch.

Think entertainment (Fantasmic) might be dark on Mondays.....if you could stay overnight at a hotel, you could get Sunday Entertainment and be there early AM on Monday to hit most of the rides ;) When (month) are you going?
