Yes. Hear them overhead when we are at Ocean Beach Kind of reminds me of being at my Grandma's near LAX many years ago.

I am guessing that that's exactly what they did. Just move the planes up. put several in the same frame, use the sky as chroma and put it all together. Of course you would never see more than one plane in a single frame. As hhsrat noted, there is a regulation how far apart planes have to be in the sky.
