I don't know about individuals, but in general, yes it will be staffed by former Concourse cast.
Construction is ahead of schedule, they're due to open for dinner on Monday 9 June. Booked an anniversary table there for SWMBO and I.
Yeah, nothing says romance like a wine list of all screw-top bottles!

I'm waiting for a place that will offer box wine brought to your table.

Yes, The Wave will be a 1-coupon table service option on the Dining Plan, and they will accept both Disney Dining Experience and Cast discounts from day one. Organizationally, it's just the Concourse on a different floor.
I've heard a few leaks, but doubt anything on the menu has been set in stone yet. I'll give a yell if I hear.

Spoke to someone tonight who ate at The Wave yesterday as part of cast previews. He lauded the chicken pot pie and the flank steak, and said desserts were served in groups, sort of like tapas.
I'm looking forward to my first visit on Tuesday.

I find the offering of localy brewed beer very intriguing. Anybody had any of it yet? Is it worth a try?

I hope you'll provide us with a review Zazu. I'm trying to decide if I should make time in the trip this fall to check out The Wave or just stay with my favorites. The stipulation of all screw top wines does put me off a bit although there are some very good white wines being done as screw caps these days. I haven't found any great reds supporting a screw top though.

They're out there, so keep drinking. I'll grant that the big, long-term reds that you'd lay down for a decade or two won't be showing up with screw closures, but since most wine is consumed the same week it's purchased, this is only an issue for the collectors.
Y'all had best get used to screw closures and artificial corks -- there just isn't enough good cork being grown any more to go around.
