If your eyes are on your head, how can you watch your own head? You could watch someone else's head, but unless you have a mirror, it would be difficult to watch your own head.

Maybe the spiel should be "Please watch someone else's head as you exit the tram."

You just have to know where to look. On those buses, there are plenty of mirrors.

I thought the line was:

"Please mind your head and watch your step. If you don't, please mind your manners and watch your language."

The head part makes better sense on the trams than on the buses.
