White chocolate is the cocoa fat; it's called chocolate because, well, it is, in a way. Aren't you glad, though, we aren't eating chocolate the way the Aztecs did? Cocoa beans mashed into a bitter paste, mixed with water, pepper and chilies. BLEAH! The English produced the first chocolate bar, but the Swiss improved it. Such interesting things in this world are found in the examination of commonplace objects....
