If you're using the Disney Dollars to give to your kids, I think it's a great idea for teaching financial responsibility (have to budget money) and protecting their belongings (if it's lost it can't be replaced). Personally I prefer the gift cards but at the same time I can see the novelty of the Disney Dollars for an 8 and 10 year old.
One thing I would caution you on - some leased locations at DLR don't accept them and I'm sure there are leased locations at WDW that are the same way. But generally if they sell Disney merchandise or food they should be accepted, and when in doubt it doesn't hurt to ask.
I've said before on this board why I don't like Disney Dollars - mainly because so many SGs and even SCMs used them on me to commit fraud or as a surcharge-free ATM. Unfortunately, like anything SGs do, most people abide by the rules and it's the SGs' actions that leave the bad taste in my mouth.

Last summer our girl had broke her wrist and was in a cast for a good portion of the summer. This was her first summer as a deep end swimmer and she had been looking forward to going to the pool all year since she graduated swim class.
So we did some research and found that a surgical glove over her hand and a condom over the entire cast was water proof enough that she could go swimming. Now as an 8 year old she knows not what condoms are used for "traditionally", but she always heard us refering to her cast glove as a condom.
So one sunny day at the local water park after a fun filled day of swiming and a dry cast, we start packing up and all of a sudden it was like the entire park of happily noisy kids decided to all be quiet at the same time and all I hear was her normally quiet voice scream "DADDY DO YOU HAVE MY CONDOMS?"
I think every head in the park turned to stare at us, and if the earth had opened up and sucked me in the timing wouldn't have been any better. Instead we laughed.

Let us not get into how reliable watercraft is like from DHS to Epcot or during a Central FL thunderstorm or when windy on Seven Seas Lagoon. I have yet see a monorail pass a disabled one on the same track or continue running in a power outage.

You could use those extra-long gloves for when you have to reach into the cows to deliver the calves...... ;)

We found a way to stop that at WDW. Now if someone wants to convert Disney Dollars into cash, they need to provide the receipt used when they purchased them.
